Removing identifying watermarks from SANS course ebooks?

I have course material such as ebooks and videos that I would like to share but SANS has embedded watermarks, some of which are invisible or woven into the document's text, that identify me as the one who received the ebooks. How can I remove this information so they can't track that I'm the one who shares them?

On a side note, I'm not sure if the video files for the courses have any sort of identifying information embedded. Does anyone know? If so, how can I remove that as well? I'm retrieving them from the source the OnDemand player reaches out to which is the CloudFront CDN.

Thanks, but I would rather learn how to do it myself. This is going to be an ongoing thing for future courses as well.
